atlantic sea farms





We were amazed with the taste of the Atlantic Sea Farms kelp products, it’s texture and mouth feel was similar to land vegetables. As an appetizer and on top of entrees it was very easy to work with in the kitchen. Our chef liked how it blended with the seafood and other products that we were serving.

Kelp Mango & Avocado Slaw

Ingredients:

1 mango, diced

1 bunch chives or scallions, thinly sliced

1 lime, juiced

1 avocado, diced

1 packet Ready Cut Kelp

1/2 tsp chili powder

*Add 1 TBSP mayonnaise for creamy version*

 

Directions:

Step 1 Combine mango, greens, lime juice, avocado, kelp, chili powder

and 1/2 tsp salt together in a bowl.

Step 2 Mix well and adjust salt and chili powder as desired.

Note: Can be made right before serving or a day ahead.

Seaweed Sesame Noodles Recipe

This is a great healthy recipe for summer! Sweet, tangy, creamy, and with that perfectly craveable umami, this kelp recipe is a great side for when you’re grilling!

 

Ingredients:

8oz Pad Thai Rice Noodles or Soba

1 drizzle sesame oil

1/3 cup

Atlantic Sea Farms, Fermented Seaweed Salad

1/4 cup fresh cilantro

1 TBS Sesame Seeds

Chili oil or flakes to taste

 

Directions:

Step 1 Cook noodles according to package directions.

Step 2 Drain and toss with sesame oil to prevent sticking.

Step 3 Toss with Seaweed Salad, cilantro, and sesame seeds.

Step 4 Top with chili oil or flakes to taste.

Step 5 Garnish with more sesame seeds and cilantro.

 

This recipe serves four as a side, and two as a meal.

Street-size flour tortillas topped with wasabi, thinly sliced red cabbage, seared soy ginger marinated tuna, seaweed salad and sliced scallions. These Asian-inspired tacos are a tuna and seaweed salad lovers dream.

Seared Tuna Tacos with Fermented Seaweed Salad

Ingredients:

For the Tuna

1 1/2 lb tuna steaks, sushi grade yellow fin tuna

1/4 cup soy sauce reduced sodium

1/4 cup seasoned rice vinegar

1 tablespoon honey

1 teaspoon toasted sesame oil

1 teaspoon sriracha

1 teaspoon ginger paste we buy this in a prepared tube – you can also grate a ginger root yourself

1 teaspoon garlic powder

 

For Assembly

12 small flour tortillas street taco size, warmed

1/4 cup wasabi mayo we used Kikkoman brand, but Trader Joes has one too

1/4 medium red cabbage thinly sliced

1/2 cup Atlantic Sea Farms Seaweed Salad

1 bunch scallions thinly sliced (white and green parts)

Black sesame seeds

 

For Serving

Pickled ginger

1 lime cut into wedges

 

Directions:

For the Tuna

Step 1 Combine tuna, soy sauce, rice vinegar, honey, sesame oil, sriracha, fresh ginger paste and garlic powder in a resealable bag. Marinate tuna for 20-30 minutes.

Step 2 Preheat grill to high heat. Clean and oil the grates.

Step 3 Remove tuna from marinade. Discard marinade. Reduce grill heat to medium high. Place tuna on the grill and grill until desired doneness (we cooked ours for 2-3 minutes per side).

Step 4 Remove from grill.

Step 5 Slice tuna thinly against the grain.

 

To Assemble the Tacos

Step 1 Add a smear of wasabi mayo to each flour tortilla, followed by red cabbage, tuna, seaweed salad and scallions. Sprinkle black sesame seeds overtop tacos.

Step 2 Serve tacos with pickled ginger and lime wedges.
