Janine Booth and Jeff McInnis from the TV show Top Chef, have created one of South Beach’s most popular restaurants. The team has taken seafood and sustainability to an entirely new level. Their Buffalo Fish Wings are made from the collars, tails and fins of the grouper and snapper they serve in their restaurant. They utilize what the fishermen bring them, without wasting any part of the fish.
