We visited La Paz, in Baja California Sur Mexico. Co-founder and CEO Neil Simms, showed us their King Kampachi which is also known as Almaco Jack. The life cycle from juvenile to adulthood is very impressive. Their deepwater pens are in an environment with a strong water flow – 5 miles out in the Sea of Cortez, in pristine water conditions. The fish are raised without hormones or prophylactic antibiotics and have no detectable mercury or PCBs. They are being raised in Mexico at a cutting-edge operation that has been brought to a commercial scale.
